  • Add pepper and garlic to the plums. Grind the food with a blender until smooth.

Hops-suneli seasoning is included in the sauce in the amount of 2-3 tbsp. The amount of vinegar is calculated based on the resulting volume of the entire mixture. So, for 1 liter of sauce, you need to add 1 tsp 70% vinegar.

Making tkemali with vinegar is quite simple. This requires:

  • Rinse greens, plums with water. Spread the ingredients on a towel to remove excess moisture.
  • Cut the plums in half and remove the pits.
  • Grind the garlic, herbs and plums with a blender until smooth.
  • Add spices, sugar and salt, vinegar to the mashed potatoes.
  • Tkemali should be stewed over low heat for about 70-90 minutes.
  • Preserve the sauce hot for the winter, rolling up glass jars with iron lids.
